Classic Lemon Vinaigrette Recipe

- ¼ cup lemon juice, freshly squeezed, from about 2-3 lemons
- 3 Tablespoons shallots, finely minced
- 1 teaspoon sugar, or to taste
- ½ teaspoon salt
- ½ teaspoon black pepper, freshly ground
- ¾ cup Extra Virgin Olive Oil
In a small food processor, blender, or medium-sized glass bowl add lemon juice, sugar, salt, pepper, and shallots. Blend until smooth.
Slowly drizzle in the olive oil and blend well, or whisk, until completely combined.
Dressing can be kept refrigerated for up to 2 weeks. Store in a tightly sealed glass jar. Shake well before using.
- If blending by hand be sure to finely mince the shallots
