- 8 ounces pecans
- 1 Tablespoon egg whites
- ⅓ cup sugar
- 2 teaspoons chili powder
- 2 teaspoons sea salt
- 1 teaspoon cinnamon
- 1 teaspoon cayenne
- ½ teaspoon ground cumin
Heat oven to 300°F. Spray a large rimmed baking sheet with non-stick spray, or line parchment paper.
In a medium-sized bowl whisk the egg white until frothy. Add the pecans and sugar. Mix gently making sure to coat all of the nuts.
Combine all the spices in a small bowl. Sprinkle over the sugared pecan and mix until completely coated.
Scatter pecans on a baking sheet in a single layer. Bake for about 35-40 minutes, stirring lightly every 15 minutes, until lightly brown and slightly crunchy.
Let cool for about 10 minutes on the tray. Break apart any nuts that are stuck together. Serve or store in an airtight container for up to 5 days.
- No pecans on hand? - substitute with walnuts or cashews
- Store tightly sealed at room temperature
- Not a big fan of spicy? Omit or reduce the cayenne pepper
- Want the pecans less salty? Cut the salt back to 1 teaspoon
- Variations: add 1/4 teaspoon of any spice, such as powdered ginger, mace, nutmeg, Chinese 5 spice, cardamom, star anise, and allspice
