Ingredients

  • 8 ounces pecans
  • 1 Tablespoon egg whites
  • cup sugar
  • 2 teaspoons chili powder
  • 2 teaspoons sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cayenne
  • ½ teaspoon ground cumin

Instructions

  • Heat oven to 300°F. Spray a large rimmed baking sheet with non-stick spray, or line parchment paper.
  • In a medium-sized bowl whisk the egg white until frothy. Add the pecans and sugar. Mix gently making sure to coat all of the nuts.
  • Combine all the spices in a small bowl. Sprinkle over the sugared pecan and mix until completely coated.
  • Scatter pecans on a baking sheet in a single layer. Bake for about 35-40 minutes, stirring lightly every 15 minutes, until lightly brown and slightly crunchy.
  • Let cool for about 10 minutes on the tray. Break apart any nuts that are stuck together. Serve or store in an airtight container for up to 5 days.

Notes

  • No pecans on hand? - substitute with walnuts or cashews
  • Store tightly sealed at room temperature
  • Not a big fan of spicy? Omit or reduce the cayenne pepper
  • Want the pecans less salty? Cut the salt back to 1 teaspoon
  • Variations: add 1/4 teaspoon of any spice, such as powdered ginger, mace, nutmeg, Chinese 5 spice, cardamom, star anise, and allspice
