Classic Lemon Vinaigrette Recipe

Ingredients

  • ¼ cup lemon juice, freshly squeezed, from about 2-3 lemons
  • 3 Tablespoons shallots, finely minced
  • 1 teaspoon sugar, or to taste
  • ½ teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ¾ cup Extra Virgin Olive Oil

Instructions

  • In a small food processor, blender, or medium-sized glass bowl add lemon juice, sugar, salt, pepper, and shallots. Blend until smooth.
  • Slowly drizzle in the olive oil and blend well, or whisk, until completely combined.
  • Dressing can be kept refrigerated for up to 2 weeks. Store in a tightly sealed glass jar. Shake well before using.

Notes

  • If blending by hand be sure to finely mince the shallots
  • The recipe can be doubled or tripled
