Brie Bites with Puff Pastry {and Cranberry Jam}

Brie Bites with Puff Pastry are a delicious, simple, and well-loved appetizer. Warm gooey brie and flaky puff pastry are the perfect combo!

Equipment

  • 1 mini muffin pan (24 wells)

Ingredients

  • 6-8 ounces Brie cheese
  • 1 sheet Puff Pastry, frozen, (thawed in refrigerator)
  • 1 teaspoon All-purpose flour, for rolling the pastry sheet
  • ½ cup cranberry sauce or jam or any flavor jam
  • ½ teaspoon sea salt
  • 2 Tablespoons chopped pecans
  • rosemary sprigs for garnish

Instructions

  • Preheat the oven to 375℉.
    Put the brie in the freezer for about 15 minutes to firm it up before cutting. Roughly chop the pecans.
  • Sprinkle flour on a cutting board or clean surface, and roll out one sheet of puff pastry to an 11" x 13" rectangle.
    Using a sharp knife or pizza cutter, cut the puff pastry crosswise into 6 equal strips and then cut it lengthwise into 4, yielding 24 total pieces.
  • Gently place a pastry square in each well of the prepared muffin tin. If needed, push the sides together to form a pastry cup. With a fork, prick the bottom of each cup 2-3 times.
  • Cut the cold brie into 24 small pieces. Leave the rind on (it's edible!). Then place one piece of brie in the center of each muffin cup.
  • Top each piece of brie with a Tablespoon of cranberry sauce or jam.
    Sprinkle each with a pinch of sea salt and then add a few pieces of the chopped pecans.
  • Bake for 20-22 minutes. The cheese should be melty, and the pastry should be golden brown and crisp on the edges.
  • Let cool for 3-4 minutes, add a small sprig of rosemary, and serve warm.

Notes

  • Use any variety of jam, such as Cherry, Fig, Apricot, or Blueberry
  • Puff Pastry is sold frozen. Let thaw overnight in the refrigerator for best results
  • Cold Brie is easier to cut
