Brie Bites with Puff Pastry {and Cranberry Jam}

- 6-8 ounces Brie cheese
- 1 sheet Puff Pastry, frozen, (thawed in refrigerator)
- 1 teaspoon All-purpose flour, for rolling the pastry sheet
- ½ cup cranberry sauce or jam or any flavor jam
- ½ teaspoon sea salt
- 2 Tablespoons chopped pecans
- rosemary sprigs for garnish
Preheat the oven to 375℉.Put the brie in the freezer for about 15 minutes to firm it up before cutting. Roughly chop the pecans. Sprinkle flour on a cutting board or clean surface, and roll out one sheet of puff pastry to an 11" x 13" rectangle. Using a sharp knife or pizza cutter, cut the puff pastry crosswise into 6 equal strips and then cut it lengthwise into 4, yielding 24 total pieces. Gently place a pastry square in each well of the prepared muffin tin. If needed, push the sides together to form a pastry cup. With a fork, prick the bottom of each cup 2-3 times.
Cut the cold brie into 24 small pieces. Leave the rind on (it's edible!). Then place one piece of brie in the center of each muffin cup.
Top each piece of brie with a Tablespoon of cranberry sauce or jam.Sprinkle each with a pinch of sea salt and then add a few pieces of the chopped pecans. Bake for 20-22 minutes. The cheese should be melty, and the pastry should be golden brown and crisp on the edges.
Let cool for 3-4 minutes, add a small sprig of rosemary, and serve warm.
- Use any variety of jam, such as Cherry, Fig, Apricot, or Blueberry
- Puff Pastry is sold frozen. Let thaw overnight in the refrigerator for best results
- Cold Brie is easier to cut
