Brie Bites with Puff Pastry are a delicious, simple, and well-loved appetizer. Warm gooey brie and flaky puff pastry are the perfect combo!
Just a handful of ingredients and 15 minutes of prep make these a go-to for us for parties and holidays!

Ingredient List:

- Brie Cheese - the star of the show! One 6-8 ounce round will be enough. There's no need to buy the very best brie because it can actually be too gooey; just get a nice quality round.
- Puff Pastry Sheets - available in the freezer section at most markets (you'll need to thaw). Most boxes contain 2 sheets.
- Jam - any flavor works! We typically use our Cranberry Orange Sauce, but cherry, apricot, blueberry, and fig jam are also great choices. Our Bacon Jam would be delicious too!
- Sea Salt - just a touch to balance the sweetness
- Pecans - lightly chopped to sprinkle on these mini bites. For extra decadence, you can use Candied Pecans
- Fresh Rosemary Sprigs - a nice garnish, especially for the holidays. Fresh thyme would be nice too
How to Make Brie Bites with Cranberry
- Pop the brie in the freezer while you are prepping the puff pastry. This firms it up and makes it much easier to cut into pieces. About 15 minutes will do it!
- Preheat the oven to 375ËšF.
- Generously coat a 24-hole mini muffin tin with oil or non-stick spray (Don't skip this step, trust me!).
- Remove the thawed puff pastry from the refrigerator. Lightly dust a surface with flour and gently roll out a sheet of puff pastry until you have an 11" x 13" rectangle.

- Using a sharp knife or pizza cutter, cut the puff pastry crosswise into 6 equal strips and then cut it lengthwise into 4, yielding 24 total pieces.
- Gently put a piece in each well of the prepared muffin tin. If needed, push the sides together to form a pastry cup. With a fork, prick the bottom of each cup 2-3 times. I recommend putting the prepared muffin tin in the refrigerator while you cut the brie, so the puff pastry has a chance to chill again before baking.


- Remove the brie from the freezer and cut it into 24 small pieces. No need to remove the rind (it's edible).
- Place one piece of brie in the center of each muffin cup.
- Top each piece of brie with about 1 teaspoon of cranberry sauce or jam.
- Sprinkle each with a pinch of sea salt and then add a few pieces of the chopped pecans.


- Bake for 20-22 minutes. The cheese should be melty, and the pastry should be golden brown and crisp. We recommend putting a tray on the rack below the muffin tins to catch any cheese drips.
- Remove from the oven, let rest for 3-4 minutes, and remove puffs from the tins.
- Add the small rosemary sprigs before serving.
- These brie bites are best served warm.


Tips for best results:
- Very cold brie is much easier to cut!
- Thaw the frozen puff pastry overnight in the refrigerator
- If your cranberry sauce is loose, cook it briefly to thicken it
- The easiest way to get the bites out of the tin is to scoop them out with a fork
Make-Ahead and Storing Leftovers Brie Bites
- Make Ahead and Refrigerate: Assemble the brie bites in the muffin tin, cover, and refrigerate unbaked for up to 3 days. Bake as above.
- Make Ahead and Freeze: Fully bake the bites, cool, and then freeze for up to 2 months in a single layer in an airtight container. Reheat them at 350ËšF until the cheese is melted.
- Leftovers: Store in an airtight container for up to 3 days and reheat at 350ËšF for about 5 minutes or until cheese is melted.

Ingredients
- 6-8 ounces Brie cheese
- 1 sheet Puff Pastry, frozen, (thawed in refrigerator)
- 1 teaspoon All-purpose flour, for rolling the pastry sheet
- ½ cup cranberry sauce or jam or any flavor jam
- ½ teaspoon sea salt
- 2 Tablespoons chopped pecans
- rosemary sprigs for garnish
Instructions
- Preheat the oven to 375℉.Put the brie in the freezer for about 15 minutes to firm it up before cutting. Roughly chop the pecans.
- Sprinkle flour on a cutting board or clean surface, and roll out one sheet of puff pastry to an 11" x 13" rectangle. Using a sharp knife or pizza cutter, cut the puff pastry crosswise into 6 equal strips and then cut it lengthwise into 4, yielding 24 total pieces.
- Gently place a pastry square in each well of the prepared muffin tin. If needed, push the sides together to form a pastry cup. With a fork, prick the bottom of each cup 2-3 times.
- Cut the cold brie into 24 small pieces. Leave the rind on (it's edible!). Then place one piece of brie in the center of each muffin cup.
- Top each piece of brie with a Tablespoon of cranberry sauce or jam.Sprinkle each with a pinch of sea salt and then add a few pieces of the chopped pecans.
- Bake for 20-22 minutes. The cheese should be melty, and the pastry should be golden brown and crisp on the edges.
- Let cool for 3-4 minutes, add a small sprig of rosemary, and serve warm.
Notes
- Use any variety of jam, such as Cherry, Fig, Apricot, or Blueberry
- Puff Pastry is sold frozen. Let thaw overnight in the refrigerator for best results
- Cold Brie is easier to cut
